I found the BEST recipe for banana chocolate chip muffins on Pinterest! It was one of those days where I had ripe bananas on hand and the kids were begging to bake, so I decided to bake something they can have for breakfast or snack on throughout the week. I was wrong about the whole "throughout the week" part, because these muffins were so good that all 12 were gone by the next day!
This is a no fuss recipe which I love. There's nothing fancy to it, just good old fashioned ingredients that you most likely already have on hand. They come out moist and full of flavor! The kids cannot get enough of them, I've already made two batches and each time they go like hot cakes!
So easy and so delicious! I think when I make them again I'm going to try and add some grated zucchini in them - any excuse to get extra veggies in these kids; chocolate masks everything ;)

Ingredients
- 1½ cups all purpose flour
- ⅓ cup granulated sugar
- ⅓ cup packed light brown sugar
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup mashed ripe bananas (about 2 large)
- 1 large egg
- ½ cup unsalted butter, melted (you can use salted butter, just don't add the salt that the recipe calls for)
- ¼ cup milk - I used half & half
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees and line 12 muffin cups with liners.
- In a large bowl, mix flour, both sugars, baking powder, and salt.
- In a medium bowl, mix mashed bananas, egg, melted butter, milk, and vanilla extract.
- Stir wet ingredients into dry just until there are no large streaks of flour.
- Stir in chocolate chips.
- Fill each muffin cup ¾ full and bake until muffin tops are firm when pressed gently, about 30 minutes.

This has always been a favorite flavor combination for me! However, my husband doesn't like cooked bananas... sooo I end up having to eat all of them myself haha!
