I've always loved cornish hens. They are small, easy to eat and always remind me of Sunday dinners at home growing up. My mom would always make them with mashed potatoes and corn - they were my favorite!
Today I'm sharing one of my favorite recipes to make; it's a recipe I got from my dad who is known to be a pretty good cook. I tweaked it a little to make my own, mostly because he uses curry and I'm not a big fan of the curry taste or smell.
These hens are not only the epitome of comfort food, but would also be great to make when you're having dinner guests, they are pretty, and figuring out portions is pretty easy since we figure one hen per person. The rice inside the hens comes out tasting SO good because it has been soaking up the juices of the hen while cooking, plus there is minced garlic, onions and a slice of lemon inside the hen as well. Can you say YUM?!
Ingredients
- 4 Cornish Hens - we ration one hen a person
- 1/2 yellow (or white) onion cut into slices
- 2-3 cloves of minced garlic
- 1/2 of a lemon cut into thin slices
- 1 cup of wild rice
- whatever spices you like to season hens with
Directions
1. Make wild rice according to packaging directions. 15 minutes before rice is done, add slices of onion to the pot so they can start softening and rice can start absorbing onion flavors.
2. While rice is cooking mince your garlic and cut lemon into slices
3. Season hens up to your liking. I like to use garlic powder, Italian seasoning, salt and one of my favorite seasonings of all time Johnny's Garlic Spread
4. Once hens are seasoned, insert a lemon slice into the hen and then some rice with onion mixture, I then add some minced garlic and then more rice until the hen is full of rice
5. Bake in the oven at 350 for an 1 hour to 1hr 15 minutes

YOU KNOW, I'm all about some cornish game hen. My husband and I snap them up when they are on sale because they are so easy, so filling and so delicious. I never thought to stuff it with anything besides rosemary, lemon and other herbs. Thanks for the new twist, I'm excited to try it!
