Roasted Veggie Pizza

Happy Tuesday!

I don't know about you, but there are many times I don't crave meat or  I have a vegetarian coming over and in that case, I need to make something that they can eat.  This is recipe is by far one of my favorite meatless recipes - it was given to me by my mom.  She used to make this a lot back when my sister lived at home and was a vegetarian.  It's delicious, so filling and goes killer with a glass of wine!


Ingredients
Mushrooms
Asparagus
Red onion
Zucchini
Feta Cheese (I used garlic herb feta)
Boboli Pizza crust

Directions
  1. Cut veggies to bite sized pieces, drizzle olive oil, fresh garlic (to your liking), and salt/pepper and combine in roasting pan
  2. Roast veggies for 15 minutes or until done on 400 degrees
  3. Brush boboli crust with olive oil - I used garlic infused olive oil, because I believe there can never be too much garlic - and place veggies on top.  I used the Biboli crust because it's thicker than regular pizza dough, since the veggies are heavy I didn't want the crust to be soggy if I used a regular crust.
  4. Put feta all around veggies
  5. Bake in oven on a pizza pan for 10 minutes or once you see cheese is melted

Such an easy recipe right?  The roasted veggies and feta are such a great combination and are savory -  I'm telling you, it beats take out pizza any day!

Yum! Roast veggie pizza is my hands down favorite anytime I see it in a restaurant! I have to try this at home!
