Quinoa and Goat Cheese Salad

I'm just getting on the quinoa bandwagon.  I had bought a package of it a couple of months back to add to chicken soup I made, and since then it has just sat there.  Recently, on Pinterest I saw this breakfast quinoa recipe.  I tried it and didn't like it at all!  The flavors were good, I just didn't like the consistency of it for breakfast.

I was determined to like and use the quinoa I bought - it's too expensive to just sit in the pantry!  I decided to use a few veggies, goat cheese and basil I had on hand and create a salad with the quinoa.  It was so simple to make and turned out delicious!




Goat Cheese Quinoa Salad

*This recipe is one I made on a whim and I eyeballed all of the ingredients.  Feel free to add/take out anything you'd like -- cucumber would be great in this too!

1 - medium tomato chopped
1/2 cup - cooked quinoa
1/4 cup - goat cheese
1/4-1/2 cup -  black olives (halved)
1/4 cup - chopped red onion
1/2 of lemon (or to taste) 
3-4 Basil leaves cut into pieces
Olive oil to taste
Salt, Pepper, Garlic Powder (to taste)

Directions:

Mix all ingredients together and serve


I've had this recipe with quinoa that was cold from the fridge, and with quinoa that I made just for this salad that was warm- both ways are delicious!

I am all about quinoa, so I am happy you found a way that you like it! This sounds SO good and like something my husband would eat since he loves goat cheese. I have to try this!!

omg i love quinoa! i tried a similar breakfast recipe, blech! quinoa is not for breakfast, for me at least! you know i have never tried goat cheese, i wouldnt even know where to buy it lol. gonna print this out and try it!

Try cooking it in chicken broth instead of water, it comes out a lot more like rice.

I've been trying to incorporate Quinoa into my diet but don't particularly like it by itself. You recipe looks amazing. I bet the combination of goat cheese and the other veggies are delicious!

This looks delicious! I'm not a huge quinoa person -- I always substitute cous cous in for it instead! Not near as healthy but it works haha

I love this type of salad cold! It'd be good with really any salad-like ingredients. And quinoa for breakfast is just absurd; that's what granola bars and Boost shakes are for if you ask me ha.
