Here are the wine makers notes: A rich and aromatic profile of vanilla bean and mocha introduce this Merlot. Dark chocolate covered cherries, caramel and nutmeg flavors create a lush and velvety smooth texture and finish.
Pair with mild to intensely flavored food such as grilled salmon, roasted lamb, and balsamic or tomato-based sauces work well with the jammy flavors of Merlot. The softer flavor profile makes it a great match for Chinese food.
I also mentioned that we made a pasta. It was a roasted tomato pasta. It has roasted tomatoes, fresh basil and parmesan. The recipe can be found here. I'm a total pasta lover and could probably eat it everyday {I feel the same way about Chinese food -yum!} either way, I've made this pasta a couple of times and love it every time. It is extremely easy to make and the flavors are delicious. The only thing that I do different is season the tomatoes with salt, pepper AND garlic (I used powder, but fresh would be awesome too). To me, pasta always needs garlic :). The pasta is a definite complement to a wine night.
