Chicken Marbella | Recipe

Now that it's Fall, it's time to bust out the Crock Pot and make some delicious comfort foods.  Chicken Marbella has been a favorite in our house for a long time, except it's normally baked.  This time I made it, I decided to see what would happen if I dumped all of the ingredients into the Crock Pot and sure enough it came out delicious!

This chicken has the best sauce, and really is comfort food at its finest.  You would never think that the ingredients would marry so well, but they do and it's heavenly.... especially over some fluffy white rice - yum!  It is the perfect combination of salty and sweet, thanks to the olives, capers, prunes, sugar and because it is cooked all day, the flavors perfectly blend together.




Ingredients:

  • 1 whole chicken (about 4-5 pounds) with skin and bones, quartered
  • Cloves from 1/2 head of garlic mashed
  • 2 Tbsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup pitted prunes
  • 8 large pitted Spanish green olives, cut in half
  • 1/4 cup capers with a bit of juice
  • 2 bay leaves
  • 1/4 cup brown sugar
  • 1/2 cup white wine - I used some pinot grigio I had on hand and it worked fine
  • 2 Tbsp fresh Italian parsley, finely chopped for garnish
Directions: 
  • Quarter chicken and add to crock pot
  • Add all ingredients and cook for 6 hours
Serve and enjoy!

The picture above doesn't do this dish justice and thanks to this wonderful time change (I say that loosely) I couldn't take a good picture, but trust me this is a must try!  You wont regret it!

This looks and sounds delicious! Do you think that it would still be good if you used chicken breasts? And if I made it on the stove instead of the crock pot? My husband won't eat chicken with skin on it. :-/ Me, I love it!! Haha. Thank you for sharing and let me know when you have a chance! :-)
