Mushroom and Scallion Pasta

Happy Tuesday everyone!  I hope you all had a great weekend.  We did, although it ended in my son dropping my new iPhone into the toilet -oy!  Needless to say, it's a goner and we'll be needing to go to the Apple store some time this week to get a replacement.  It's amazing how much we rely on phones really: pictures, videos, GPS, calling people, text messages, shopping - I mean, I almost feel naked without one and I'm thinking twice about leaving the house just in case something happens.


Anyway today I'm sharing one of my favorite pasta meals to make.  It's delicious, filling, takes almost no time to make and is great for meatless meal.



Ingredients

Clove (or two) garlic
Butter
Olive Oil
Mushrooms
Scallions
Red Pepper Flakes
Parsley (dried or fresh)
Grated parmesan cheese
Spaghetti

*I don't have exact measurements, because I just make it to taste - sorry.

Directions
  1. Melt butter in pan and add cracked garlic and olive oil.  Cook for a few minutes so the butter sauce absorbs garlic flavor.
  2. Add in Mushrooms, parsley, scallions, and red pepper flakes.  Cook mushrooms until done
  3. Toss mushrooms in butter sauce with cooked and drained al dente pasta, add parmesan cheese on top and enjoy! 
 The lighting was terrible, but you get the idea

Easy peasy right?  It's SO good and tastes amazing with a nice glass of wine!

If you don't have the mushrooms or scallions at home, I many of times make the pasta with just the garlic butter sauce, red pepper flakes and cheese on top.  It's still delicious and hits the spot when you just want a big bowl of pasta!

This looks delicious, lady!!! My husband and I were just saying this weekend how we don't give scallions enough credit. They really enhance a meal, don't they? I love mushrooms, too, so this is definitely a winning recipe in my book!

Yummo!!! I make something similar but I use different mushrooms. These are such simple but delicious ingredients. And with a glass of vino--- perfection!!

Mushrooms are my favorite, so I always love new ways to incorporate them into my meals! And that's such a shame about your son's phone, hopefully you can get a new one sorted out soon!
