Turkey and Quiona Taco Salad {Make Me Up Mia}


Hey friends! For those that don't know me, my name is Mia and I blog over at Make Me Up Mia. My blog is a good mix of beauty and lifestyle. I love sharing beauty tips/looks/reviews, food recipes, fitness motivation and just pieces of my life in general. Today I'm sharing an absolute favorite dinner dish in our household. It's everything we look for in a recipe - easy, delicious, filling and healthy.

Dustin and I work full time then we spend 3-4 evenings a week at our gym. We are always on the hunt for quick and easy meals that are also healthy. PS- If you have a recipe you'd like to share with me, I'd LOVE to hear it! We don't have a lot of time in our evening to spend cooking. I know so many of us can relate in several different ways! We make this 3-4 times a month, we really love it. 


What you'll need-


Ingredients:

1 lb ground turkey
1 cup quinoa, cooked
1 packet low sodium taco seasoning
2/3 cup water
1 can corn
1 can black beans
1 can Rotel
Lettuce

Optional toppings, things we enjoy:

Plain Greek yogurt or Light sour cream
Diced avocado
Cheese
Onion
Salsa/Sriracha 

Directions:

Cook Quinoa as directed. While quinoa is cooking, brown the ground turkey meat. Then, add the taco seasoning and water to cooked ground turkey, stir together and simmer a couple of minutes until most of the liquid is absorbed. Combine the cooked quinoa in with the taco turkey meat. Mix in the black beans, corn and Rotel. Stir to combine and simmer a few more minutes to let some of the liquid absorb.

Then just build, top and enjoy! Voila
 

Tip- There are only 2 of us and this makes a good amount. We love to eat it for lunch or dinner leftovers either on salad again, with tortilla chips as nachos or rolled up inside a tortilla and baked. So versatile and delicious!

this is a go to at our house, minus the lettuce. turkey + quinoa + tomatoes + beans (i throw in the corn, husband is not a fan) so easy and so yummy!
